Christmas is just around the corner, which means so are the festive recipes that come with it. Gingerbread pancakes are delicious and a fun way to start your Christmas morning. They’re simple and easy to make – not too different from a traditional pancake. Here is what you will need to get started:


(The ingredients marked with the * are things we carry in our shop)

  • 1-½ cups of all-purpose flour
  • 1-teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon sea salt*
  • ½ teaspoon ground ginger*
  • 1-teaspoon ground cinnamon*
  • 1 egg
  • 1 ¼ cups milk
  • ¼ cup molasses
  • 3 teaspoons of vegetable oil
  • Sugar (optional)

In a small bowl stir together the flour, baking powder, baking soda, sea salt, ginger, and cinnamon. Set-aside.

In a larger mixing bowl, stir together the milk, egg, molasses, and then the vegetable oil. Afterwards, add the flour mixture and mix very well. Pour a quarter cup of batter for each pancake on a preheated grill. Cook on the first side until the batter is full of bubbles on the surface, and then proceed to flip over. When the second side is lightly browned you know you’re done. Sprinkle a little bit of sugar on each pancake.
