The super bowl is roughly a week away, so to prepare we will be posting a NEW recipe every day until the big day! Today we are going to talk about this delicious queso dip recipe that your party guest will LOVE.
Please note: This recipe calls for a pressure cooker. You *could* use a slow cooker too. I have included alternate directions at the end.
Here is what you'll need to get started:
1 yellow onion, diced
1 tablespoon olive oil
1 pound ground beef
1 ounce ranch
1 cup diced tomatoes (from a can is fine)
7 ounces diced green chilis
1 cup green onion
3 cups of shredded cheddar cheese
Turn on your pressure cooker with the saute setting and wait until hot. Layer in all the ingredients BUT the cheese, you are going to save that for last. Cook the mixture while crumbling the beef until it is brown. Next, add in the cheese BUT DO NOT STIR IN. You are only going to layer the cheese on top of everything. Place the lid on and seal the top.
Cook on high for 4 minutes. When ready, do a quick release. Stir contents of the pot & immediately serve with chips.
If you do not own a pressure cooker you could probably use a slow cooker, but it would take a lot longer. If you decide to use a slow cooker brown the beef on a stove top first and then layer everything into the pot. Cook on low for eight hours.
